I've seen it done in a restaurant setting, but I'm not sure how close we are to a mass-produced product.. For example, international restaurant chain Wagamama teamed up with Gaz Oakley/Avant Garde Vegan on a vegan dish (https://youtu.be/B-2aE3_7aJY?t=82)..
His egg was made "with miso-infused coconut and Sriracha Mayo"... I actually had this dish and it was incredible. The textures were much like I remembered, though not very "eggy" tasting. I definitely think you could search for a creative homemade solution.. but it might be tedious..
I would pay good money for a vegan breakfast sandwich with a runny "yolk" !
